Bone-in chicken thighs with Spicy Desert Dust, a hotter finish for browned skin and a squeeze of lime.
Make it with Spicy Desert Dust. This recipe uses a measured amount; the blend already contains sea salt.
Ingredients
4 large bone-in, skin-on chicken thighs (about 2 lb / 900 g total), fully thawed and unseasoned
1 level tablespoon (15 ml by volume) Spicy Desert Dust all-purpose seasoning
2 teaspoons (10 ml) neutral oil, such as avocado or canola oil
1 lime, cut into halves or wedges, for serving
Directions
Heat. Set the smoker or covered grill for indirect heat at 250°F (120°C), following its instructions. Add suitable wood or pellets and confirm the temperature at grate level.
Season. Keep the thawed chicken refrigerated until prep; do not rinse. Pat dry, trim loose skin or fat and rub with the oil. Spread 1 level tablespoon Spicy Dust thinly over all four thighs, skin and underside. Add no salt or sugar.
Smoke. Place skin-side up over indirect heat with space between thighs. Smoke for about 60–90 minutes, checking from 45 minutes, until the thickest meat reaches 145–150°F (63–66°C), avoiding bone. It is not yet safe to eat; continue cooking immediately.
Finish hot. Raise to 375°F (190°C) indirect heat. Cook skin-side up for about 20–35 minutes, until browned and each thigh reaches 175–185°F (79–85°C); every piece must reach at least 165°F (74°C). Avoid flames. If the rub darkens quickly, move farther from the heat or reduce to 350°F (175°C) and continue cooking.
Rest. Rest on a clean platter for 10 minutes, uncovered. Serve with lime and taste a cooked bite before adding more seasoning.

How long do smoked chicken thighs take, and when are they done?
Allow about 2 hours 10 minutes including 15 minutes prep, an estimated 105 minutes cooking and a 10-minute rest; extra smoker preheating time is additional. Cooking can take 80–125 minutes. Use grate and meat thermometers rather than the clock. Poultry must reach 165°F (74°C); this recipe targets 175–185°F (79–85°C) for thigh texture. Check each piece away from bone. Color and clear juices do not replace a temperature reading.
How do I avoid rubbery skin or scorched seasoning?
Dry the skin, use a thin coating of oil and Dust, leave space around each thigh and finish over hotter indirect heat. Rest uncovered so steam does not soften the skin. Keep the date-based rub away from direct flames. If it darkens too quickly, move the thighs from the heat source or reduce the cooker to 350°F (175°C), continuing to the stated internal temperature.
How much Desert Dust should I use?
Use 1 level tablespoon (15 ml by volume) of Spicy all-purpose Desert Dust across four large unseasoned thighs, about 2 lb (900 g). Use the all-purpose blend rather than the Spicy Taco packet. It contains sea salt, so skip extra salt and brining. Reduce the Dust for chicken already seasoned or injected with a salt solution. The blend lists mustard; check the current label for dietary requirements.
Can I finish the thighs in an oven?
Yes. Preheat an oven to 375°F (190°C) as the smoke stage ends. Transfer the thighs directly onto a wire rack over a rimmed sheet, skin-side up, and follow the same finishing temperatures. Do not cool or refrigerate partly cooked chicken between stages.
How should I refrigerate or freeze leftovers?
Refrigerate in shallow covered containers within 2 hours, or within 1 hour above 90°F (32°C). Keep at 40°F (4°C) or below and use within 3–4 days. Freeze tightly wrapped portions for up to 3 months for best quality, then thaw in the refrigerator.
How do I reheat smoked chicken thighs?
Place refrigerated or thawed thighs in a baking dish, cover loosely and heat in a 350°F (175°C) oven until the thickest meat reaches 165°F (74°C). Uncover near the end to help dry the skin. Reheating time depends on thigh size and starting temperature; check with a thermometer.
What can I serve with them?
Try rice and grilled zucchini, or cabbage slaw and warm tortillas. Keep sides lightly seasoned until you have tasted the chicken, then add lime at the table.
