Smoked Chicken Legs with Original Desert Dust

These smoked chicken legs use individual drumsticks, not whole leg quarters. Start them gently in the smoker, finish the skin with hotter indirect heat in the oven, then brush on Original Desert Dust so the date-based seasoning stays away from the hottest stage.

Ingredients

  • 8 skin-on chicken drumsticks, about 2½ pounds (1.1 kg), fully thawed
  • 2 tablespoons (30 ml) neutral cooking oil, divided
  • 1 level tablespoon (15 ml) Original Desert Dust

Directions

  1. Prepare the smoker and finish. Heat the smoker to 275°F (135°C) and verify it with a chamber thermometer. In a clean bowl, mix the Dust with 1 tablespoon oil; keep this finishing mixture away from raw poultry. Set a rack over a rimmed baking sheet.
  2. Dry the drumsticks. Pat the thawed chicken thoroughly dry without rinsing it. Rub with the remaining tablespoon oil, spreading out the skin where it has folded. Place the drumsticks apart on the smoker grate so hot air can circulate.
  3. Smoke and preheat. Smoke with the lid closed, checking after about 50 minutes. When the thickest meat is approaching 155–160°F (68–71°C), usually after 60–90 minutes, have the oven preheated to 425°F (218°C). This is a transfer point, not the final safe temperature.
  4. Finish the skin. Move the drumsticks immediately to the prepared rack and hot oven. Cook about 10–20 minutes, turning once, until the skin browns and every piece reaches at least 165°F (74°C), probing away from bone. For softer drumstick meat, continue to roughly 175–180°F (79–82°C).
  5. Add the Dust. Move to a clean platter and lightly brush with the reserved Dust-oil mixture. Rest uncovered for 5 minutes, then serve. Keep the finish light so it does not soak the skin; taste before adding salt. Never reuse raw-chicken tongs on the finished food.

Cooking timing: 1 hr 10 mins–1 hr 50 mins + 5 mins resting.

RECIPE TIPS & FAQS

ARE CHICKEN LEGS THE SAME AS DRUMSTICKS?

Here, chicken legs means individual drumsticks. A whole leg quarter includes the thigh and is much larger, so it needs different timing. Choose drumsticks of similar size and check the thickest part of each one rather than relying on the smallest piece.

WHAT SMOKER TEMPERATURE SHOULD I USE?

The recipe starts at 275°F (135°C). Monitor the cooking chamber as well as the chicken, since lid thermometers can differ from the grate temperature. Keep the lid closed as much as practical and follow your smoker manufacturer’s fuel and ventilation instructions.

HOW LONG DO SMOKED CHICKEN LEGS TAKE?

Allow roughly 60–90 minutes in the smoker plus 10–20 minutes for the hot finish. Large drumsticks, cold weather and frequent lid opening can extend that. The listed timing is an estimate; an internal thermometer reading decides when the chicken is cooked.

WHY FINISH THE DRUMSTICKS IN A HOT OVEN?

Gentle smoke alone can leave skin soft or rubbery. Drying the skin first and using a rack in a hot oven helps it brown. Skin texture still varies with the chicken and equipment; a heavy wet sauce or covering the finished platter will soften it.

WHAT INTERNAL TEMPERATURE IS SAFE?

Every drumstick must reach at least 165°F (74°C). Probe the thickest meat without touching bone and check more than one spot on large pieces. The optional 175–180°F finish is a texture choice for dark meat, not a different USDA safety minimum.

WHEN SHOULD I ADD ORIGINAL DUST?

Brush on the measured Dust-oil mixture after cooking. Original Dust contains ground dates, so keeping it out of the 425°F finish limits scorching. Mix and reserve it before handling raw chicken; use a clean brush and a separate clean serving platter.

CAN I MAKE THESE AHEAD AND REHEAT THEM?

Cook completely in one session; do not partly smoke chicken and refrigerate it for a later finish. Chill cooked leftovers within 2 hours, or 1 hour above 90°F (32°C), use within 3–4 days and reheat to 165°F. Original Dust lists mustard; check current labels.
