Savory Desert Dust Chicken & Mushrooms

Sear the chicken first, then use the same pan for mushrooms, shallots and broth. Savory Desert Dust does its work in the sauce.

Ingredients

  • 4 chicken breasts
  • 2 1/2 cups portobello mushrooms
  • 1 garlic clove
  • 3 tablespoons shallots
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 2 tablespoons Savory Desert Dust

Directions

  1. Heat the olive oil in a skillet. Sear the chicken for about 10 minutes on each side, depending on thickness, then remove from the pan and set aside.
  2. Reduce the heat to medium. Cook the garlic and shallots in the same pan until softened.
  3. Add the mushrooms, chicken broth and Savory Desert Dust. Stir and cook over medium-high heat until the mushrooms begin to soften.
  4. Return the chicken to the skillet and simmer over low-medium heat for 5–7 minutes. Check the thickest part with a food thermometer: chicken must reach 165°F / 74°C. Continue cooking as needed.
  5. Plate the chicken and spoon the mushroom sauce over it.

Keep in mind

  • Chicken-breast thickness affects cooking time. Use the thermometer reading, not the clock alone.
  • Keep the pan for the sauce after searing the chicken.
