This roasted half chicken makes a smaller roast dinner without cutting up a whole bird at home. Ask the butcher for one lengthwise half with its breast, wing, thigh and drumstick attached, then roast it flat with the skin facing up.
Make it with Savory Desert Dust. Start with the amount listed, then taste before adding more.
Heat and reserve. Heat the oven to 425°F (218°C). Before handling chicken, stir 1 teaspoon Savory Dust with 1 teaspoon oil in a clean bowl; reserve for serving. Mix the remaining 2 teaspoons Dust with 1 tablespoon oil in a separate bowl.
Prepare the half bird. Pat the chicken dry without rinsing. Gently loosen the skin over the breast and thigh and spread the second Dust mixture underneath. Rub the outside with the remaining 2 teaspoons oil. Discard any mixture that touched raw chicken.
Position and roast. Lay the half cut-side down and skin-side up in the pan, with the thigh and drumstick spread naturally so the breast and leg sit at a similar height. Tuck the single wing tip underneath. Roast without covering for about 40–55 minutes.
Check both light and dark meat. Begin checking around 35 minutes. The thickest breast and the inner thigh and wing areas must each reach at least 165°F (74°C), avoiding bone. If the breast browns early, shield just that area loosely with foil while the rest finishes.
Rest and serve. Move to a clean platter. Brush lightly with the clean reserved Dust-oil mixture and rest uncovered for 10 minutes to limit trapped steam. Separate the leg and breast at the joints for serving. Taste before adding salt; Savory Dust already contains it.
Cooking timing: 40–55 mins + 10 mins resting.

Ask for one chicken split lengthwise into halves, with excess backbone removed and one breast, wing, thigh and drumstick kept together in each half. This is not a boneless half breast. Have the butcher do the heavy cutting and check for loose bone fragments before cooking.
IS A HALF CHICKEN THE SAME AS SPATCHCOCK CHICKEN?
No. A spatchcock chicken is a whole bird flattened after its backbone is removed, so it still has two sides. This recipe uses only one lengthwise half. A whole flattened chicken needs more pan space and may have a different roasting time.
HOW DO I KEEP IT FLAT IN THE PAN?
Put the cut side against the pan and leave the skin facing up. Let the leg open naturally instead of folding it tight against the breast, and tuck the wing tip under so it does not burn. Do not force a joint or try to balance the bird upright.
WHERE SHOULD I CHECK THE TEMPERATURE?
Check the thickest breast plus the inner thigh and wing areas, staying clear of bone. Each must reach at least 165°F (74°C) before removal. If one area is cooler, continue cooking and recheck; skin color or clear-looking juices do not establish safety.
HOW DO I GET BETTER SKIN WITHOUT BURNING THE DUST?
Pat the skin dry, use an uncovered shallow pan and put most of the Savory Dust underneath the skin. Keep the surface lightly oiled rather than wet with sauce. Shield an area that browns too fast and rest uncovered; a covered platter traps steam.
CAN I ROAST TWO HALVES AT ONCE?
Yes, if they fit with space around them on a large pan; use the ingredient quantities for each half. Airflow and oven recovery can change timing, so check every half individually. Do not assume that doubling the chicken doubles the roasting time.
HOW DO I STORE LEFTOVERS AND CHECK ALLERGENS?
Remove leftover meat from the large bones and chill in shallow containers within 2 hours, or 1 hour above 90°F (32°C). Use within 3–4 days and reheat to 165°F (74°C). Savory Dust lists mustard; check current product labels and cross-contact guidance.
