Savory Desert-Dusted Chicken Skewers with Red Onion

Ingredients:

1.5 lbs (680g) boneless, skinless chicken thighs or breasts, cut into 1.5” chunks

1 large red onion, cut into 1.5” pieces

Savory Desert Dust seasoning

2 tablespoons olive oil
-
Juice of 1 lemon
-
1 teaspoon kosher salt
-
½ teaspoon black pepper
-
Fresh cilantro or parsley, for garnish

Skewers (metal or soaked wooden)
Instructions:

Marinate the Chicken:
In a large bowl, mix olive oil, lemon juice, Desert Dust seasoning. Add chicken and toss to coat. Cover and marinate in the fridge for at least 30 minutes. -
Assemble the Skewers:
Thread chicken and red onion pieces onto skewers, alternating for color and flavor. -
Preheat the Grill:
Heat your BBQ to medium-high. Clean and oil the grates. -
Grill the Skewers:
Grill for 12–15 minutes, turning every 2–3 minutes, until chicken is charred in spots and cooked through (internal temp 165°F / 74°C). -
Serve:
Remove skewers from grill. Sprinkle a pinch of extra Desert Dust for a final hit of flavor. Garnish with fresh cilantro or parsley and serve hot.
