Savory Desert-Dusted Chicken Skewers with Red Onion

Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken thighs or breasts, cut into 1.5” chunks

  • 1 large red onion, cut into 1.5” pieces

  • Savory Desert Dust seasoning 

  • 2 tablespoons olive oil

  • Juice of 1 lemon

  • 1 teaspoon kosher salt

  • ½ teaspoon black pepper

  • Fresh cilantro or parsley, for garnish

  • Skewers (metal or soaked wooden)

Instructions:

  1. Marinate the Chicken:
    In a large bowl, mix olive oil, lemon juice, Desert Dust seasoning. Add chicken and toss to coat. Cover and marinate in the fridge for at least 30 minutes.

  2. Assemble the Skewers:
    Thread chicken and red onion pieces onto skewers, alternating for color and flavor.

  3. Preheat the Grill:
    Heat your BBQ to medium-high. Clean and oil the grates.

  4. Grill the Skewers:
    Grill for 12–15 minutes, turning every 2–3 minutes, until chicken is charred in spots and cooked through (internal temp 165°F / 74°C).

  5. Serve:
    Remove skewers from grill. Sprinkle a pinch of extra Desert Dust for a final hit of flavor. Garnish with fresh cilantro or parsley and serve hot.
