Easy Taco-Seasoned Loaded Potatoes
Taco-Seasoned Loaded Potatoes
Ingredients:
- 4 medium russet potatoes
- 1 oz (approx. 2 tbsp) Desert Dust taco seasoning
- 2 tbsp olive oil
- 1 cup shredded cheese (cheddar, Monterey jack, or a blend)
- ½ cup sour cream (optional)
- ½ cup salsa (optional)
- ¼ cup chopped green onions or fresh cilantro
Instructions:

Preheat your oven to 425°F (220°C). Scrub and rinse the potatoes, then pierce each with a fork several times.

Rub each potato with a little olive oil. Place them directly on the oven rack or on a baking sheet and bake for 45-60 minutes, or until tender when pierced with a fork.

Once baked, let the potatoes cool slightly. Slice each potato in half lengthwise, scoop out a bit of the potato flesh to create a small well for toppings, and place the scooped-out portions in a mixing bowl.

Add 1lb of ground turkey, beef or your favorite Veggies to a skillet and cook until browned or veggies soften. Add one packet of Desert Dust Mild Taco or Spicy Taco seasoning and follow instructions on the packet to season and cook protein.

Load your potatoes. Spoon the seasoned filling back into the potato skins. Top each half with shredded cheese and bake again for 5-10 minutes, or until the cheese is melted and bubbly.

Add Toppings! Remove from the oven and add a dollop of sour cream, a spoonful of salsa (if using), green onions or cilantro.
