Desert Dust BBQ Salad with Aji Verde

Ingredients: As many as you desire. Below is what we suggest
- heads of Corn
- Red Onion
- Zucchini
- Squash
- Bell Pepper Strips
- Mushroom
- Olive oil
- Desert Dust
Aji Verde Ingredients
- 1/2 cup mayonnaise
- 2 tablespoons fresh lime juice
- 2 cups coarsely chopped cilantro
- 1 coarsely chopped garlic clove
- 5 scallions coarsely chopped
- 1/4 cup chopped mint
- 1 tablespoon chopped serrano or jalapeño chile
- 1/4 teaspoon salt
Instructions
- Toss all the vegetables in olive and add Desert Dust.
- Place on medium grill for 30 minutes until golden and soft.
- Remove from grill and allow to cool until vegetable can be handled and chopped into smaller pieces, removing membrand and unwanted seeds
- Serve in large bowl or on a large chopping board
- Aji Verde - Place all ingredients in a blender. Process on low, gradually increasing speed, until smooth, about 1 minute. Cover and chill sauce at least 1 hour before serving. (This allows flavors to meld and mellow out.)
