Desert Dust BBQ Salad with Aji Verde

    Ingredients: As many as you desire. Below is what we suggest

  • heads of Corn
  • Red Onion
  • Zucchini 
  • Squash
  • Bell Pepper Strips
  • Mushroom
  • Olive oil
  • Desert Dust

Aji Verde Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons fresh lime juice
  • 2 cups coarsely chopped cilantro
  • 1 coarsely chopped garlic clove
  • 5 scallions coarsely chopped
  • 1/4 cup chopped mint
  • 1 tablespoon chopped serrano or jalapeño chile
  • 1/4 teaspoon salt

Instructions

  1. Toss all the vegetables in olive and add Desert Dust.
  2. Place on medium grill for 30 minutes until golden and soft. 
  3. Remove from grill and allow to cool until vegetable can be handled and chopped into smaller pieces, removing membrand and unwanted seeds
  4. Serve in large bowl or on a large chopping board
  5. Aji Verde - Place all ingredients in a blender. Process on low, gradually increasing speed, until smooth, about 1 minute. Cover and chill sauce at least 1 hour before serving. (This allows flavors to meld and mellow out.)
